I love meat. Like any good Midwestern gal I was raised a carnivore. And since my dear husband has gone vegetarian I'm now eating less and less meat. So when I found that Florentines love meat as much as I do I was thrilled. They don't just love meat, they have a particular version of steak that is legendary. Bistecca alla Fiorentina is basically a giant piece of steak, slightly cured and then grilled (basically just warmed on either side) and beautifully presented with salt, pepper and olive oil. I am going to eat this while we are there and I'm not sharing.

This is about the cut of meat: "The steak is cut from the loin, just below the rib cage and above the round or rump." And then this is about how they measure the size of the cut, "in Florence we like to measure our steaks in terms of fingers, and a good steak should be between 3 and 4 fingers high." If that doesn't sound sexy to you then maybe I'm just desperate for a good piece of meat.
